Meet Debbie Worsley, Cheshire East Council's
School Chef of the Year 2010 who was recently Highly Commended for
her dessert at the North West Regional heat of the national School
Chef of the Year competition run by the Local Authority Caterers
Association (LACA). To enjoy her award-winning dessert
'Chocolate Surprise Muffin' follow the recipe below - and the
surprise? Beetroot! This was Debbie's ingenious way of packing more
nutrition into her scrumptious pud.
Chocolate Surprise Muffin
Ingredients
1.25 oz cocoa
3.25 oz plain flour
1 tsp Baking Powder
4.25 oz castor sugar
2 small eggs
3 fl oz oil
1/2 tsp vanilla essence
4.5 oz cooked beetroot
Method
1. Mix dry ingredients together in a bowl.
2. Puree cooked beetroot, add eggs, vanilla essence and oil and
blend until smooth.
3. Add beetroot mix to dry ingredients and mix lightly.
4. Pour into muffin cases.
5. Bake for 25 - 30 minutes until firm to touch.
OVEN TEMPERATURE: GAS 4.
Frosting
1 oz cream cheese
1 oz mascarpone cheese
1.5 oz butter
1 tblsp honey
Beat together to make frosting.
